Begin by preheating your air fryer to 350°F (175°C). Take the slices of whole grain bread and flatten them gently using a rolling pin.
Lightly spray the basket of your air fryer with olive oil to prevent sticking. Take each flattened slice of bread and press it into the bottom of a muffin tin or directly into the air fryer basket, forming a cup shape.
In a mixing bowl, crack the eggs and add the shredded mozzarella cheese, diced bell peppers, diced red onion, and chopped chives. Season the mixture with a pinch of salt and pepper, then whisk everything together until it’s thoroughly combined.
Carefully pour the egg mixture into each toast cup, leaving a small amount of space at the top of each cup.
Place the filled basket into your preheated air fryer and cook for about 8-10 minutes, checking for doneness.
Once cooked, remove the egg-cheese toast cups from the air fryer and allow them to cool for a minute before serving.

Garnish with additional chives or mozzarella cheese for a finishing touch.
