2mediumapples (preferably Honeycrisp or Fuji), peeled and diced into bite-sized pieces
1tablespoonfresh lemon juice
1/2cupgranola (select your favorite, ideally with nuts for added crunch)
1tablespoonpacked brown sugar
1teaspoonground cinnamon
1tablespoonmelted butter (or substitute with coconut oil for a vegan-friendly option)
1teaspoonpure vanilla extract
a pinchsalt
Instructions
In a large mixing bowl, combine the diced apples with the lemon juice. Toss the apples gently to ensure they are fully coated in lemon juice, which will help keep them from browning.
In another bowl, combine the granola, brown sugar, ground cinnamon, melted butter (or coconut oil), vanilla extract, and a pinch of salt. Mix well until the ingredients form a crumbly topping.
Carefully add the apple mixture into the bowl with the granola mix. Gently fold the ingredients together, ensuring all the apple pieces are well coated with the crumbly mixture.
Preheat your air fryer to 350°F (175°C) for approximately 3-5 minutes to ensure an even cooking temperature.
Once preheated, lightly spray the air fryer basket with cooking spray to prevent the apple bites from sticking during cooking.
Evenly spread the apple mixture across the air fryer basket. Make sure not to overcrowd, as this promotes better air circulation and cooking.
Air fry the apple bites for 10-12 minutes, shaking the basket halfway through the cooking time to ensure they cook evenly. The apples should be tender and have a beautiful caramelized finish.
After the cooking time is complete, carefully remove the basket from the air fryer and allow the apple bites to cool for a minute before plating.
Notes
Serve warm with a drizzle of melted butter or a scoop of vanilla ice cream for added indulgence.
