Instructions
In a medium saucepan, whisk together the milk, granulated sugar, cornstarch, and salt until the mixture is smooth and free of lumps.
Turn the heat to medium and continuously stir the mixture with a spatula or wooden spoon. After about 5 to 7 minutes, the pudding will begin to thicken and bubble; once this happens, remove the saucepan from the heat.
Stir in the vanilla extract and 1/2 cup of Biscoff cookie spread, mixing until fully melted and the pudding is silky-smooth. Set the pudding aside to cool slightly for a few minutes.
Prepare individual serving cups or bowls. Begin by layering sliced bananas in the bottom of each cup, followed by a generous layer of the Biscoff pudding mixture. Sprinkle a tablespoon of crushed Biscoff cookies on top of the pudding.
Repeat the layering process, adding another layer of bananas, followed by pudding, and then more crushed cookies until the cups are almost full, ensuring the final layer is pudding.
Place the completed pudding cups in the refrigerator and chill for at least 2 hours, allowing the flavors to meld beautifully.
When ready to serve, add a dollop of whipped cream on top of each pudding cup. Garnish with extra crushed Biscoff cookies and a drizzle of the remaining Biscoff cookie spread for an indulgent finish.
