Instructions
In a medium mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Whisk thoroughly until the mixture is smooth and creamy, ensuring the honey is well incorporated.
Gently fold in the fresh blueberries with a spatula, being careful not to squish them, to ensure they are evenly spread throughout the yogurt mixture.
Prepare your workspace by lining a baking sheet with parchment paper; this will help prevent sticking and ensure easy removal after freezing.
Using a spoon or a small ice cream scoop, drop generous clusters of the yogurt mixture onto the lined baking sheet, spacing them about 1-2 inches apart to allow for even freezing.
While the yogurt clusters are still wet, sprinkle a mix of granola and the chopped nuts generously on top of each cluster, pressing lightly to ensure they stick.
Carefully place the baking sheet in the freezer and allow the clusters to freeze for approximately 3-4 hours, or until they are completely solid and firm to the touch.
