Instructions
Begin by preheating your oven to 350°F (175°C). Prepare a 9x5-inch loaf pan by greasing it with butter or cooking spray, then dusting it with flour to ensure easy release.
In a medium mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until combined. This will be your dry mixture.
In a large mixing bowl, use an electric mixer to cream the softened butter and cream cheese together on medium speed until the mixture is smooth, fluffy, and light in color—about 2-3 minutes.
Gradually add the granulated sugar to the butter and cream cheese mixture. Continue mixing on medium speed until everything is well blended and the sugar has dissolved.
Add the eggs to the mixture, one at a time, mixing thoroughly after each addition to ensure they are fully incorporated. Next, mix in the vanilla extract and lemon zest until well combined and fragrant.
Gradually alternate adding the dry flour mixture and the Greek yogurt to the wet ingredients. Start by adding a third of the flour mixture, mixing gently, then add half of the yogurt. Repeat this process, ensuring you start and end with the dry ingredients, mixing until just combined and no streaks of flour remain.
Carefully fold in the blueberries using a spatula, taking care not to overmix to preserve the integrity of the berries.
Pour the batter into the prepared loaf pan, smoothing out the top with a spatula for an even surface.
Place the loaf pan in the preheated oven and bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean or with just a few moist crumbs.
Once baked, remove the loaf from the oven and allow it to cool in the pan for about 10 minutes. After this, gently transfer the bread to a wire rack to cool completely before slicing.
