Instructions
In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and bell pepper to the skillet. Sauté for 3-4 minutes, or until the vegetables are softened and the onion is translucent.
Stir in the minced garlic and continue cooking for an additional minute, until the garlic is fragrant and lightly golden.
Add the ground chicken to the skillet, using a spatula to break it up into smaller pieces. Cook the chicken for about 5-7 minutes, or until it’s browned and fully cooked through, ensuring it’s no longer pink.
Once the chicken is cooked, sprinkle in the Cajun seasoning, smoked paprika, and cayenne pepper. Stir well to evenly coat the chicken mixture with the spices, allowing the flavors to meld.
Incorporate the diced tomatoes and Worcestershire sauce into the skillet. Let the mixture simmer for about 5 minutes, stirring occasionally, until it thickens slightly. Taste and adjust the seasoning with salt and black pepper as needed.
While the chicken mixture simmers, prepare the sandwich buns. Lightly toast them in a separate pan or under a broiler until they are golden brown and warmed through.
Assemble your sloppy joes by spooning generous amounts of the Cajun chicken mixture onto the bottom halves of each toasted sandwich bun.
Top with the other halves of the buns and garnish each sandwich with a sprinkle of fresh chopped parsley for added color and flavor.
