Preheat your oven to 350°F (175°C) to prepare for baking.
In a large skillet over medium heat, add the ground beef and brown it thoroughly, breaking it up with a spatula. This should take about 5-7 minutes. If needed, drain any excess grease.
Once the beef is browned, add the finely diced onion and minced garlic to the skillet. Sauté until the onion becomes translucent and fragrant, around 3-4 minutes.
Reduce the heat to low and stir in the cream of mushroom soup and sour cream, mixing until well incorporated. Season with paprika, salt, and freshly ground black pepper to taste. If including corn, gently fold it in now.
Grease a 9x13-inch baking dish with oil or cooking spray. Spread the beef and mushroom mixture evenly across the bottom.
Layer the frozen tater tots on top of the meat mixture in a single, even layer.
Sprinkle the shredded cheddar cheese generously over the tater tots.
Cover the dish tightly with aluminum foil and place it in the preheated oven. Bake for 30 minutes.
After 30 minutes, carefully remove the foil and return the dish to the oven. Bake for an additional 15-20 minutes, until the tater tots are golden brown and the cheese is bubbling.
Once baked, let the casserole cool for a few minutes. Garnish with freshly chopped green onions before serving.
