In a medium-sized mixing bowl, combine the Greek yogurt with honey or maple syrup if you prefer a sweeter flavor profile. Mix until well-blended and smooth.
Take each strawberry half and gently dip it into the yogurt mixture, making sure one side is completely coated. Use a spoon if necessary to help spread the yogurt evenly. Place the yogurt-covered strawberries on the prepared baking sheet, cut side up.
Place the baking sheet in the freezer and allow the yogurt-covered strawberries to freeze for approximately 1 hour, or until they are firm to the touch.
While the strawberries are freezing, prepare the chocolate coating. In a microwave-safe bowl, add the dark chocolate chips along with coconut oil if you choose to use it. Once the yogurt-dipped strawberries have firmed up, remove them from the freezer. Dip each strawberry into the melted chocolate, making sure it is fully coated. Allow any excess chocolate to drip off before placing them back onto the parchment-lined baking sheet.
After dipping, immediately sprinkle a pinch of flaky sea salt over the chocolate-covered strawberries for an unexpected burst of flavor.
Return the baking sheet to the freezer and let the chocolate set for another 30 minutes. This will create a firm chocolate shell around the creamy yogurt.
