Instructions
Begin by preheating your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper, which will help prevent sticking and ensure easy cleanup.
In a medium mixing bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon until well combined. Set this mixture aside for later use.
In a large mixing bowl, use an electric mixer to beat the softened butter, packed brown sugar, and granulated sugar together on medium speed until the mixture becomes creamy and smooth, about 2-3 minutes.
Add the large egg and vanilla extract to the butter-sugar mixture. Continue to beat until the ingredients are fully incorporated and the mixture is smooth.

Once the cookies are finished baking, allow them to cool on the baking sheet for approximately 5 minutes for easy handling. Then, transfer the cookies to a wire rack to cool completely.
