In a large mixing bowl, thoroughly combine the rolled oats, vanilla protein powder, almond flour, ground cinnamon, and a pinch of salt. Ensure there are no clumps for an even texture.
In a separate bowl, whisk together the pure maple syrup, almond butter, and pure vanilla extract until the mixture is smooth and homogeneous.
Gradually add the wet mixture to the dry ingredients, mixing until all components are uniformly incorporated. If you choose to include, carefully fold in the finely chopped walnuts or pecans and the unsweetened shredded coconut for added flavor and texture.
Once the mixture is fully combined, use your hands to take small portions (approximately one tablespoon each) and roll them into bite-sized balls.
Arrange the protein bites on a tray lined with parchment paper. After forming all the bites, place the tray in the refrigerator for about 30 minutes to allow them to firm up.
