Instructions
Begin by preheating your oven to 350°F (175°C). Prepare a 9x13 inch baking pan by greasing it well and lining it with parchment paper.
In a large mixing bowl, pour in the melted unsalted butter. Add the granulated sugar and whisk together until smooth.
Incorporate the eggs one at a time, mixing thoroughly after each addition. Fold in the lemon zest, lemon juice, and vanilla extract.
In a separate bowl, sift together the flour, baking powder, and salt. Gradually add this to the wet ingredients, mixing gently until just combined.
Pour the batter into the prepared baking pan, spreading it evenly.
Bake in the preheated oven for 25-30 minutes until the top is set and a toothpick comes out clean.
Let the brownies cool in the pan for about 10 minutes, then lift them out using the parchment paper and transfer to a wire rack.
Once cooled, dust with powdered sugar if desired, cut into squares, and enjoy!
