To the blended cottage cheese, add the unsweetened cocoa powder, honey or maple syrup, vanilla extract, and sea salt. Mix well until all ingredients are fully incorporated, adjusting the sweetness level to your liking.
In a microwave-safe bowl, melt the dark chocolate chips in increments of 20 seconds, stirring in between each interval until the chocolate is completely smooth. Alternatively, you may use a double boiler method for melting.
Once the chocolate is melted, stir in the almond milk until the mixture is velvety smooth. Allow the chocolate mixture to cool slightly at room temperature.
Gently fold the cooled chocolate mixture into the cottage cheese blend, being careful to retain some airiness for a light mousse texture. Mix until combined but do not over-mix.
Carefully spoon the chocolate cottage cheese mousse into serving cups or bowls, ensuring an even distribution. Place the cups in the refrigerator for at least 30 minutes to allow the mousse to set properly.
Just before serving, add a generous topping of fresh berries and a sprig of mint leaves to each cup to enhance the visual appeal and add a burst of freshness.
