12ozyour favorite pasta (penne or fettuccine highly recommended)
2tablespoonsextra virgin olive oil
1smallonion, finely diced
3clovesgarlic, minced
28ozcrushed tomatoes
1teaspoondried basil
1teaspoondried oregano
0.5teaspoonred pepper flakes (optional, for a little kick)
1cupheavy cream
1cupfreshly grated Parmesan cheese
to tasteSalt and freshly cracked pepper
for garnishFresh basil leaves
Instructions
In a large pot, bring salted water to a vigorous boil. Add the pasta and cook it according to the package instructions until it reaches al dente perfection. Once cooked, drain the pasta and set it aside. Be sure to reserve 1 cup of pasta water for later use.
Heat the olive oil in a large skillet over medium heat. Once hot, introduce the finely diced onion and sauté for about 3-4 minutes, or until it turns translucent. Next, add the minced garlic and continue to sauté for an additional 1-2 minutes, or until the garlic becomes fragrant and slightly golden.
Carefully pour in the crushed tomatoes along with the dried basil, oregano, and optional red pepper flakes for added heat. Stir the mixture well and allow it to simmer gently for 10 minutes, giving time for the flavors to meld beautifully.
Lower the heat to its gentlest setting and gradually stir in the heavy cream, ensuring it integrates smoothly into the sauce. Allow the sauce to simmer for another 5 minutes, during which it will thicken slightly, becoming ultra-creamy.
Introduce the cooked pasta to the skillet filled with the luscious creamy tomato sauce. Toss everything together so that the pasta is evenly coated. If the sauce appears too thick, gradually add the reserved pasta water in small increments until you achieve your desired consistency.
Stir in the grated Parmesan cheese, allowing it to melt into the sauce. Season with salt and freshly cracked pepper to taste. Continue to heat the mixture for a few more minutes until everything is heated through and beautifully combined.
Plate your creamy tomato pasta and finish with a flourish by garnishing it with fresh basil leaves on top.
Notes
For an extra indulgent touch, consider sprinkling additional Parmesan cheese before serving.
