In a separate bowl, combine the maple syrup (or honey), melted coconut oil, vanilla extract, and sea salt. Whisk these ingredients together vigorously until the mixture is smooth and fully incorporated.
Gradually add the wet mixture to the dry ingredients, stirring with a spatula or wooden spoon. Continue mixing until the dough comes together; it should feel slightly sticky yet manageable.
Once combined, gently fold in the dark chocolate chips and optional chopped nuts. Ensure they are evenly distributed throughout the dough for a balanced flavor in every bite.
Transfer the cookie dough into an airtight container. Press it down slightly to compact it and place it in the refrigerator for a minimum of 30 minutes, allowing it to firm up for easier scooping.
