Begin by heating 1 tablespoon of sesame oil in a large skillet or wok over medium heat. Once the oil is shimmering, add the minced garlic and sauté for about 30 seconds until fragrant.
Next, add the ground chicken to the skillet, using a spatula to break it into small pieces. Cook the chicken for approximately 5-7 minutes, stirring occasionally, until it is fully cooked.
Once the chicken is cooked, push it to one side of the skillet. Pour the beaten eggs into the empty side and scramble until fully set.
Add the mixed vegetables to the skillet and stir-fry everything together for an additional 2-3 minutes.
Incorporate the chilled cooked jasmine rice into the skillet, breaking up any clumps. Drizzle the soy sauce over the rice and stir well to combine.
Finally, mix in the chopped green onions and adjust seasoning with salt and pepper to taste.
Remove the skillet from heat and serve the fried rice hot, garnished with toasted sesame seeds if desired.
