Instructions
In a high-speed blender or food processor, add the plain Greek yogurt, sliced banana, mixed berries, honey (or maple syrup), vanilla extract, and lemon juice.
Blend the mixture on high until smooth and creamy. If the ingredients stick to the sides, pause to scrape them down with a spatula. Taste the mixture and adjust the sweetness by adding more honey or maple syrup if preferred.
Once the mixture is fully blended, pour it into a shallow dish for freezing. If you have an ice cream maker, you can use that as well.
For the shallow dish method, spread the yogurt mixture evenly in the dish and cover it tightly with plastic wrap. Place it in the freezer to start the freezing process.
If using an ice cream maker, churn the mixture according to the manufacturer's instructions, typically for about 20-30 minutes, or until it reaches a soft-serve consistency.
For the shallow dish method, every 30 minutes, remove the dish from the freezer and stir the yogurt mix gently with a fork for about 2-3 hours, until it reaches a frozen yet creamy texture. This prevents ice crystals from forming.
Once ready to serve, scoop the frozen yogurt into bowls or cones. Enhance your dish with your choice of toppings such as chopped nuts, chia seeds, or coconut flakes for an added crunch and delightful flavor twist.
