Instructions
Begin by preheating your oven to 350°F (175°C). Prepare a 9x13 inch baking pan by lining it with parchment paper, letting the edges overhang slightly for easy removal later.
In a large mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Using an electric mixer, beat the mixture on medium speed until it becomes light and fluffy, which should take about 2-3 minutes.
Add the eggs to the butter mixture one at a time, ensuring each egg is well incorporated before adding the next. After the last egg, stir in the vanilla extract to infuse your batter with a lovely flavor.
In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt until well combined. This will ensure that your dry ingredients are evenly mixed and will prevent any clumping.
Gradually incorporate the dry mixture into the wet mixture. Stir gently until just combined, taking care not to overmix as this can lead to denser brownies.
Once your batter is mixed, fold in the chocolate chips and walnuts (if you're using them), distributing them evenly throughout the mixture.
Pour half of your brownie batter into the prepared baking pan, spreading it out evenly with a spatula to create a smooth layer at the bottom.
Take your cookie dough and layer it evenly over the brownie batter, gently pressing it down to ensure complete coverage without disturbing the brownie layer underneath.
Dollop the remaining brownie batter over the cookie dough. Use a knife or a spatula to create beautiful swirls by gently marbling the two batters together, allowing some of the cookie dough to peek through.
Place the pan in your preheated oven and bake for 30-35 minutes. Check for doneness by inserting a toothpick in the center; it should come out mostly clean but with a few moist crumbs attached.
Once baked, remove the brookies from the oven and let them cool in the pan for at least 15 minutes. Once cool, use the overhanging parchment paper to lift them out, and then cut into squares for serving.
