Instructions
Preheat your oven to 425°F (220°C) to ensure it's hot and ready for the potatoes.
In a large mixing bowl, add the halved baby potatoes and pour in 1 tablespoon of olive oil. Season with salt, pepper, chopped fresh rosemary, dried oregano, and lemon zest. Toss everything together until the potatoes are evenly coated with the oil and seasonings.
Transfer the seasoned potatoes onto a baking sheet in a single layer for even roasting. Place the baking sheet in the preheated oven and roast for approximately 20-25 minutes, shaking the pan halfway through cooking to promote even browning.
While the potatoes are roasting, heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the minced garlic and sauté for about 1 minute, or until it becomes fragrant and slightly golden.
Incorporate the steak cubes into the skillet, ensuring they are seasoned well with smoked paprika, salt, and pepper. Cook the steak bites for around 3-4 minutes, stirring occasionally, until they develop a nice brown crust on the outside while remaining tender on the inside.
After the steak is cooked to your preference, remove it from heat. When the potatoes are golden and crispy, take them out of the oven as well.
To serve, arrange the garlic steak bites on a platter alongside the crispy herb potatoes. Garnish with finely chopped parsley.
Notes
For an elegant touch, consider serving the dish on a wooden board and adding lemon wedges on the side to accentuate the flavors.
