Instructions
Preheat your oven to 400°F (200°C).
In a spacious mixing bowl, combine the diced sweet potatoes and sliced chicken sausages.
In a separate small bowl, whisk together minced garlic, honey, olive oil, smoked paprika, dried thyme, and a pinch of salt and pepper.
Pour the honey garlic mixture over the sweet potato and sausage combination and toss everything together thoroughly.
Spread the coated mixture evenly across a large baking sheet lined with parchment paper.
Place the baking sheet in the preheated oven and bake for 25-30 minutes, tossing halfway through.
Once baked, remove the baking sheet from the oven and allow it to cool for a few minutes.
Garnish the dish with freshly chopped parsley right before serving.
Notes
For a rustic presentation, serve directly from the baking sheet. Drizzle extra honey before serving for added sweetness.
