Instructions
Begin by preheating your oven to 400°F (200°C). This will ensure it’s hot and ready for roasting.
On a large, rimmed baking sheet, combine the cubed sweet potatoes. Drizzle the olive oil over them and sprinkle with smoked paprika, salt, and pepper. Toss everything together until the sweet potatoes are well coated, then spread them out into a single layer to allow for even roasting.
Place the baking sheet in the preheated oven and roast the sweet potatoes for 20 minutes, or until they start to soften and the edges begin to caramelize.
While the sweet potatoes roast, heat a skillet over medium heat. Add the sliced sausage and cook for about 5-7 minutes, stirring occasionally, until the sausage is nicely browned and crisped on the edges.
In a small mixing bowl, whisk together the honey, minced garlic, dried thyme, and a pinch of salt. Once the sausage is browned, pour this honey-garlic mixture into the skillet, stirring to ensure all the sausage pieces are evenly coated. Allow it to cook for an additional 2-3 minutes until the sauce thickens slightly and becomes sticky.
After 20 minutes of roasting, remove the sweet potatoes from the oven. Carefully spoon the sausage and honey mixture on top, then use a spatula to toss everything gently together, ensuring the sweet potatoes and sausage are evenly combined.
Return the baking sheet to the oven and continue roasting for an additional 15-20 minutes, or until the sweet potatoes are fork-tender and have a lovely caramelized color.
Once done, take the baking sheet out of the oven and let the medley cool for a few minutes. Just before serving, garnish the dish with freshly chopped parsley for a pop of color and freshness.

Serve in a large bowl or on a platter, drizzled with any remaining honey sauce from the baking sheet for added visual appeal.
