8ozcream cheese, softened at room temperature
1cupshredded provolone or mozzarella cheese
4largelettuce leaves (Roma or iceberg varieties work well)
1tablespoonfresh parsley, chopped (for garnish)
Instructions
Heat a large skillet over medium-high heat and add the olive oil. Once hot, sauté the sliced onions and bell peppers in the skillet. Cook for about 5 minutes, stirring occasionally, until they are softened and fragrant. Remove from the skillet and set aside in a bowl.
In the same skillet, introduce the seasoned thinly sliced beef. Sprinkle with garlic powder, onion powder, salt, and freshly cracked black pepper. Cook the beef for approximately 4-5 minutes or until nicely browned and cooked through.
Once the beef is thoroughly cooked, incorporate the sautéed peppers and onions back into the skillet. Let the mixture simmer for an additional 2 minutes to allow the flavors to meld beautifully. Remove from heat and allow to cool slightly.
While the beef mixture cools, in a separate bowl, combine the softened cream cheese and the shredded cheese. Mix thoroughly until the mixture is smooth and homogenous.
Take a large lettuce leaf and lay it flat on a clean surface. Place a spoonful of the beef and vegetable mixture in the center of the leaf, followed by a generous dollop of the creamy cheese mixture on top.
Carefully wrap the lettuce leaf tightly around the filling. Start rolling from one end, tucking the sides in as you go to secure the filling. Repeat this process for the remaining lettuce leaves and filling.
For presentation, slice the roll-ups in half diagonally if desired. Secure each piece with a toothpick for convenient eating.
