Low Carb Creamy Chicken Casserole

Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, heat the olive oil over medium heat. Add the broccoli and cauliflower florets and sauté for 5-7 minutes until tender.
In a mixing bowl, combine the softened cream cheese, sour cream, garlic powder, onion powder, and a pinch of salt and pepper. Blend until smooth.
Fold in the shredded chicken and sautéed vegetables into the cream mixture until well combined.
Transfer the mixture into a greased 9 x 13 inch casserole dish, spreading evenly.
Sprinkle the top with shredded cheddar cheese and grated Parmesan cheese.
Dust lightly with paprika.
Bake in the preheated oven for 25-30 minutes until golden brown and bubbling.
Allow to cool for 5 minutes before serving.
Notes
Serve hot and garnish with freshly chopped parsley or chives.
