Instructions
In a spacious mixing bowl, combine the almond flour and fine sea salt. Stir vigorously to ensure there are no clumps in the almond flour.
In a separate medium bowl, whisk together the peanut butter, maple syrup, and vanilla extract until the mixture is smooth and well blended.
Gradually pour the wet mixture into the bowl with the dry ingredients. Use a spatula or a sturdy spoon to mix them thoroughly; it may require some effort to achieve a uniform consistency.
Once the mixture is well combined, gently fold in the mini chocolate chips and, if desired, the chopped walnuts. Ensure that these extras are evenly distributed throughout the dough.
With slightly damp hands, take small portions of the dough and roll them into bite-sized balls, approximately 1 inch in diameter. Place each ball onto a parchment-lined baking sheet, ensuring they are spaced apart.
Once all of the bites have been formed and arranged on the baking sheet, transfer them to the refrigerator. Chill for at least 30 minutes to firm up the texture and enhance the flavor.
After chilling, enjoy your cookie dough bites! Store any leftovers in an airtight container in the refrigerator, where they will remain fresh for up to one week.
Notes
