Instructions
Begin by taking a medium-sized mixing bowl. Add the rolled oats and ground flaxseed, and stir them together until they are evenly mixed.
Next, introduce the creamy peanut butter, honey (or maple syrup), vanilla extract, and a pinch of sea salt into the bowl.
Using a spatula or your clean hands, blend all the ingredients together until they are thoroughly combined. The mixture should feel slightly sticky to the touch.
Carefully fold in the mini chocolate chips, ensuring they are evenly distributed throughout the mixture.
After mixing, cover the bowl with plastic wrap or a lid and refrigerate the mixture for about 10-15 minutes. This will help firm it up for easier handling.
Once chilled, remove the mixture from the refrigerator. Take small portions with your hands and roll them into bite-sized balls, each about 1 inch in diameter.
Arrange the rolled energy bites on a parchment-lined baking sheet or a plate, ensuring there is some space between each.
Return the baking sheet to the refrigerator and let the bites chill for an additional 30 minutes to fully set and firm up.
Once they are set, transfer the energy bites to an airtight container to keep them fresh. Store in the refrigerator for up to a week.
