Instructions
In a large mixing bowl, combine the Greek yogurt, creamy peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well blended.
Line an 8x8 inch baking dish with parchment paper, ensuring it hangs over the edges slightly.
Pour the yogurt mixture into the prepared baking dish and spread it evenly with a spatula.
Sprinkle dark chocolate chips and chopped nuts on top, pressing them down gently into the mixture.
Cover the dish tightly with plastic wrap or aluminum foil and freeze for at least 4 hours, or until solid.
Once frozen, lift the bars out using the parchment paper and cut into squares or bars.
Enjoy immediately or store leftovers in an airtight container in the freezer for up to 2 weeks.
Notes
For serving, arrange the bars on a colorful plate, and optionally drizzle a bit more melted peanut butter on top for an extra touch of indulgence!
