1teaspoonpure vanilla extract
1teaspoonground cinnamon
1/4cupgranulated sugar

to tastetablespoonmaple syrup, for drizzling and serving
Instructions
Flatten the Bread: Start by using a rolling pin to gently flatten each slice of bread. Roll until the bread is thin yet pliable, making it easier to roll later.
Mix the Filling: In a medium bowl, combine the crumbled sausages with 1 tablespoon of sugar and a pinch of cinnamon. This flavorful mixture will serve as the filling for the roll-ups. Spread a small spoonful of the sausage mixture along one edge of each flattened bread slice.
Roll Up: Carefully roll each slice of bread tightly around the filling, starting from the edge where the mixture is placed. If the rolls unravel, secure the ends with toothpicks to hold them in place.
Prepare Egg Mixture: In a separate bowl, whisk together the eggs, whole milk, vanilla extract, the remaining sugar, and ground cinnamon until the mixture is fully blended and slightly frothy.
Heat the Skillet: Place a large skillet over medium heat and add 1 tablespoon of butter. Allow it to melt and coat the skillet evenly to prevent sticking.
Cook the Roll-Ups: Dip each roll, seam-side down, into the egg mixture to ensure they are well coated. Once coated, place them in the hot skillet. Cook for approximately 2-3 minutes on each side, or until they turn a lovely golden brown and crispy on the outside.
Serve Delightfully: Carefully remove the cooked roll-ups from the skillet. If desired, sprinkle them with powdered sugar for an extra touch of sweetness. Serve warm on a plate, garnished with a small dish of warm maple syrup for easy dipping.
Notes
For an elegant touch, serve the roll-ups on a rustic wooden board alongside seasonal fruits like strawberries or blueberries for a fresh complement.
