Instructions
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking and for easier cleanup.
In a large mixing bowl, combine the cooked shredded chicken with the buffalo sauce, shredded cheddar cheese, softened cream cheese, diced green onions, garlic powder, and onion powder. Stir well until all ingredients are fully incorporated into a creamy mixture.
On a clean, flat surface, lay out a tortilla. Scoop about 2-3 tablespoons of the chicken filling onto the center of the tortilla.
Carefully roll the tortilla tightly around the filling, making sure to fold in the sides as you go to secure the contents within. Repeat this process for all remaining tortillas and filling.
Place the rolled taquitos seam-side down on the prepared baking sheet. Lightly spray or brush the tops with cooking spray or olive oil; this will give them a beautiful golden-brown and crispy texture.
Bake in the preheated oven for 15-20 minutes, until the taquitos are golden brown and crispy all around. Keep an eye on them towards the end to prevent burning.
Once done, remove from the oven and allow the taquitos to cool for a few minutes on the baking sheet before serving.
