Instructions
In a large, non-stick skillet, heat the extra virgin olive oil over medium heat until shimmering. Add the finely diced onion and sauté for about 3-4 minutes, or until it becomes translucent and fragrant.
Introduce the minced garlic and sliced mushrooms to the skillet, stirring frequently for another 5-6 minutes until the mushrooms are tender and golden.
Fold in the packed fresh spinach and cook for approximately 2-3 minutes, or until wilted. Season the mixture with sea salt, cracked black pepper, and the dried Italian seasoning to enhance the flavors.
In a separate mixing bowl, combine the creamy ricotta cheese with a pinch of sea salt and black pepper. Stir until the mixture is smooth and well-blended.
Add the broken lasagna noodle pieces directly into the skillet, followed by the marinara sauce. Gently stir to ensure all ingredients are evenly coated and mixed.
Reduce the heat to a gentle simmer and cover the skillet with a lid. Cook for about 15-20 minutes, stirring occasionally, until the noodles are cooked through and tender.
Once the noodles are cooked to your liking, dollop the smooth ricotta mixture over the top of the skillet contents. Sprinkle the shredded mozzarella and the grated Parmesan cheese evenly over the dish.
Cover the skillet once more and cook for an additional 5-7 minutes, or until the cheese is melted, bubbly, and slightly golden.
Remove the skillet from heat and allow it to rest for a few minutes before serving to let the flavors meld together.
For added freshness, garnish with freshly torn basil leaves if desired. Serve directly from the skillet for a charming, rustic presentation that’s sure to impress!
