Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
In a small mixing bowl, whisk together the all-purpose flour, baking powder, and salt until well combined. Set the bowl aside for later use.
In a large mixing bowl, use an electric mixer to beat the softened butter and cream cheese together on medium speed until the mixture is smooth, creamy, and fluffy, about 2-3 minutes.
Once the butter and cream cheese are well blended, add the granulated sugar and vanilla extract. Beat the mixture on medium speed until the sugar is fully incorporated and the mixture is light and airy.
Crack in the large egg, mixing on low speed until just combined and no streaks remain.
Gradually add the flour mixture to the wet ingredients, stirring gently with a spatula until just combined. Be careful not to overmix, as this could affect the cookie texture.
Gently fold in the diced strawberries and white chocolate chips (if using) until they are evenly distributed throughout the cookie dough, taking care to not crush the strawberries.
With a cookie scoop or a tablespoon, drop rounded portions of the dough onto the prepared baking sheet. Ensure that you space them about 2 inches apart to allow for spreading during baking.
Bake in the preheated oven for 12-15 minutes or until the edges of the cookies are lightly golden brown. The centers may appear slightly soft and underbaked but will firm up as they cool.
Once baked, remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes. Afterward, carefully transfer them to a wire rack to cool completely.
For an elegant finishing touch, once the cookies have cooled, dust them lightly with powdered sugar just before serving.
