Generously season both sides of the chicken breasts with chili powder, garlic powder, smoked paprika, salt, and pepper.
In a skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sear each side for about 6-7 minutes until golden brown and cooked through. Remove from skillet, let rest, then slice into thin strips.
Using the same skillet, add the corn kernels and sauté for 3-4 minutes until slightly charred. Remove from heat and squeeze fresh lime juice over the corn.
In a small bowl, combine the mayonnaise and crumbled feta cheese, stirring until fully blended.
Place a scoop of cooked jasmine rice at the bottom of each bowl.
Arrange sliced chicken on top of the rice, followed by sautéed corn and slices of avocado. Drizzle the feta mayonnaise dressing over the bowl.
Sprinkle fresh chopped cilantro on top and add hot sauce if desired.
