Instructions
In a large mixing bowl, combine the all-purpose flour, granulated sugar, salt, and baking powder. Whisk the dry ingredients together until they are evenly incorporated and free of lumps.
Add the chilled, cubed butter to the flour mixture. Using a pastry cutter or your fingertips, mix the ingredients until they form a texture similar to coarse crumbs with pea-sized pieces of butter remaining.
Gradually pour in the ice-cold water, one tablespoon at a time, while gently mixing with a fork. Continue adding water until the dough begins to hold together. You may not need to use all the water, so add it gradually for best results.
Divide the dough into two equal halves and shape each half into a rectangle. Wrap each rectangle tightly in plastic wrap and refrigerate for a minimum of 30 minutes. This helps to firm up the dough for easier handling.
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
On a lightly floured surface, roll out one rectangle of dough to a thickness of about 1/8 inch. Cut the rolled dough into rectangles measuring approximately 4x3 inches. Repeat this process with the second rectangle of dough.
Spread approximately 1 tablespoon of mixed berry jam onto half of the dough rectangles. Be sure to leave a small border around the edges to ensure proper sealing.
Carefully place an unfilled dough rectangle on top of each jam-coated rectangle. Gently press the edges together with your fingers, then use a fork to crimp and seal the edges securely.
Arrange the prepared Pop Tarts on the lined baking sheet. Use a fork to poke a few small holes in the top of each one. This allows steam to escape during baking, preventing sogginess.
Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and flaky. Remove from the oven and let the Pop Tarts cool completely on the baking sheet.
In a small bowl, combine the powdered sugar with 2-3 tablespoons of milk. Stir until you achieve a smooth, pourable consistency. If you wish, add a few drops of food coloring to create a vibrant frosting.
Once the Pop Tarts are completely cool, drizzle the prepared frosting over the tops in a fun pattern. Finish by generously sprinkling with colorful sprinkles for an appealing touch.
