Instructions
In a large mixing bowl, thoroughly combine the ground chicken, chopped spinach, shredded white cheddar, breadcrumbs, finely chopped red onion, minced garlic, dried oregano, salt, and black pepper until all ingredients are evenly distributed.
Divide the chicken mixture into four equal portions. Using your hands, carefully shape each portion into a patty.
Heat olive oil in a skillet over medium heat. Once the oil is shimmering, gently place the patties into the skillet. Cook for approximately 5-7 minutes on one side until golden brown, then carefully flip and cook for another 5-7 minutes, or until the patties are thoroughly cooked and reach an internal temperature of 165°F (75°C).
During the last minute of cooking, sprinkle the remaining shredded white cheddar cheese on top of each patty. Cover the skillet briefly with a lid to help melt the cheese perfectly.
While the patties are cooking, toast the whole wheat burger buns on a separate pan or grill until they are golden brown and slightly crisp.
To assemble your burgers, place a cooked chicken patty on the bottom half of each toasted bun. Layer with fresh arugula (or lettuce), followed by slices of tomato and avocado. Finish by placing the top half of the bun over the toppings.
